Three Ideas for Dinner in a Snap

Zesty Avocado Salsa and Chicken

Ingredients:
  • 3 boneless skinless chicken breasts, cut into 1/2-inch chunks
  • 1 teaspoon salt and pepper, or to taste
  • 1 ½ tablespoons vegetable oil
  • ½ onion, thinly sliced 
  • 2 cloves garlic, crushed
  • 1 jar Zesty Avocado Salsa
  • 6 servings Mexican Rice
Instructions:
  1. Heat oil in large saucepan over medium heat
  2. Cut chicken into chunks and slice onion 
  3. Add chicken, season with salt and pepper, add onion and saute 5 minutes
  4. Add garlic and saute 1 minute more
  5. Add Zesty Avocado Salsa and bring to boil. Turn down heat, cover and simmer 15-20 minutes and temp to 165 degrees
  6. Heat Mexican Rice and serve chicken and sauce over rice. Add a salad or Slaw and you’ve got dinner!

Snappy Stuffed Chicken

Ingredients:
  • 4 chicken breasts
  • 1 tablespoon olive oil or avocado oil
  • 1 teaspoon paprika
  • 1 teaspoon salt, divided 
  • 1/4 teaspoon garlic powder and onion powder
  • 4 ounces Fontina cheese, grated
  • 2 tablespoons mayonnaise 
  • 1 cup Snappy Olive Tapenade
Instructions:
  1. Preheat oven to 375
  2. Place the chicken breasts on a cutting board and drizzle with oil 
  3. Add the paprika, 1/2 teaspoon salt, garlic powder, and onion powder to a small bowl and stir to combine. Sprinkle evenly over both sides of the chicken.
  4. Use a sharp knife to cut a pocket into the side of each chicken breast, set aside
  5. Add grated Fontina or Feta cheese, mayonnaise, and Snappy Olive Tapenade to a small mixing bowl and stir well to combine
  6. Spoon the olive mixture into each chicken breast evenly 
  7. Place the chicken breasts in a 9 x 13 baking dish. Bake, uncovered, for 25 minutes or until chicken is cooked through to 165 degrees

Snappy Naan Pizza

Ingredients:
  • 4 naan bread pieces
  • 1/2 cup Bold Tomato Bruschetta
  • 1 cup mozzarella cheese, shredded/sliced
  • 2 tablespoons fresh basil, chopped 
Instructions:
  1. Preheat oven to 425 degrees
  2. Spread pizza sauce evenly over naan bread
  3. Then sprinkle shredded mozzarella cheese, you can also add parmesan cheese if you have on hand
  4. Bake on the oven rack for 8 minutes - the crust and cheese should be golden brown
  5. Slice and serve with fresh basil, parmesan cheese, and any other additional toppings. For an extra great idea-top with sliced vegetables and clean out the fridge!
