Zesty Avocado Salsa and Chicken
Ingredients:

- 3 boneless skinless chicken breasts, cut into 1/2-inch chunks
- 1 teaspoon salt and pepper, or to taste
- 1 ½ tablespoons vegetable oil
- ½ onion, thinly sliced
- 2 cloves garlic, crushed
- 1 jar Zesty Avocado Salsa
- 6 servings Mexican Rice
- Heat oil in large saucepan over medium heat
- Cut chicken into chunks and slice onion
- Add chicken, season with salt and pepper, add onion and saute 5 minutes
- Add garlic and saute 1 minute more
- Add Zesty Avocado Salsa and bring to boil. Turn down heat, cover and simmer 15-20 minutes and temp to 165 degrees
- Heat Mexican Rice and serve chicken and sauce over rice. Add a salad or Slaw and you’ve got dinner!

Snappy Stuffed Chicken

- 4 chicken breasts
- 1 tablespoon olive oil or avocado oil
- 1 teaspoon paprika
- 1 teaspoon salt, divided
- 1/4 teaspoon garlic powder and onion powder
- 4 ounces Fontina cheese, grated
- 2 tablespoons mayonnaise
- 1 cup Snappy Olive Tapenade
- Preheat oven to 375
- Place the chicken breasts on a cutting board and drizzle with oil
- Add the paprika, 1/2 teaspoon salt, garlic powder, and onion powder to a small bowl and stir to combine. Sprinkle evenly over both sides of the chicken.
- Use a sharp knife to cut a pocket into the side of each chicken breast, set aside
- Add grated Fontina or Feta cheese, mayonnaise, and Snappy Olive Tapenade to a small mixing bowl and stir well to combine
- Spoon the olive mixture into each chicken breast evenly
- Place the chicken breasts in a 9 x 13 baking dish. Bake, uncovered, for 25 minutes or until chicken is cooked through to 165 degrees

Snappy Naan Pizza

- 4 naan bread pieces
- 1/2 cup Bold Tomato Bruschetta
- 1 cup mozzarella cheese, shredded/sliced
- 2 tablespoons fresh basil, chopped
- Preheat oven to 425 degrees
- Spread pizza sauce evenly over naan bread
- Then sprinkle shredded mozzarella cheese, you can also add parmesan cheese if you have on hand
- Bake on the oven rack for 8 minutes - the crust and cheese should be golden brown
- Slice and serve with fresh basil, parmesan cheese, and any other additional toppings. For an extra great idea-top with sliced vegetables and clean out the fridge!
